بررسی تأثیر نگرش و آگاهی تغذیه‌ای بر سطح امنیت غذایی خانوارهای روستایی (مورد مطالعه: شهرستان زنجان)

چکیده

هدف اصلی این تحقیق، بررسی تأثیر نگرش و آگاهی تغذیه­ای بر سطح امنیت غذایی خانوارهای روستایی در شهرستان زنجان بود. جامعه آماری پژوهش، 25864 نفر از سرپرستان خانوارهای روستایی در شهرستان زنجان بود که 353 نفر از آنها با استفاده از روش نمونه‌گیری طبقه­ای با انتساب متناسب برای انجام تحقیق انتخاب شد. ابزار گردآوری داده­ها پرسشنامه بود. روایی محتوایی پرسشنامه با نظرسنجی از اساتید دانشگاه زنجان مورد تأیید قرار گرفت. همچنین، روایی سازه (شامل روایی همگرا، تشخیصی و منطقی) و پایایی ترکیبی ابزار پژوهش نیز با برآورد مدل اندازه­گیری و پس از انجام اصلاحات لازم به دست آمد. برای تجزیه و تحلیل داده‌های پژوهش از نرم­افزارهای SPSS وAMOS  استفاده شد. نتایج توصیفی تحقیق نشان داد که سطح امنیت غذایی بیشتر پاسخگویان مطالعه شده پایین بود. بر اساس نتایج حاصل از مدل­سازی معادلات ساختاری مشخص شد که دو متغیر آگاهی تغذیه­ای و نگرش تغذیه­ای و مؤلفه­های آن شامل بهداشت غذا، سلامت و ایمنی غذا، ارزش غذایی و قیمت و کیفیت مواد غذایی اثر مثبت و معنی­داری بر سطح امنیت غذایی خانوارهای روستایی داشتند و در حدود 68 درصد از واریانس آن را تبیین نمودند. بر اساس نتایج این تحقیق می­توان نتیجه گرفت که بهبود نگرش و آگاهی تغذیه­ای روستاییان به­ویژه با ارایه آموزش­های مورد نیاز از پیش­شرط­های اصلی افزایش سطح امنیت غذایی در بین آنهاست.
